Hi Shane,
We have two sets of rules under which a candidate may obtain the CWNE certification.
First, there are the pre-2007 rules which allow a candidate that has passed the pw0-100, pw0-200, and pw0-205 exams to apply for the CWNE certification. The rules under this system were that you had to document 3 years of experience, document three specific projects and how you participated in them, and submit the application with its referral requirements.
Second, there are the post-2007 rules, which are now in effect. You can find all of the details for these rules here: http://www.cwnp.com/cwne/requirements.html
Regarding your specific situation, you applied based on the pre-2007 rules. Keep in mind that if you attain your CWNE certification under the pre-2007 rules, it will expire Dec 31, 2008 unless you pass the pw0-300 exam before that date.
It is my suggestion that you apply again (considering it doesn't cost anything to apply) using the new application. You may reuse any existing referrals (and your first documented project) from your existing application, but please address my concerns (per my email inquiry) in your first project before resubmitting it. On your new application, please be sure to note that this is the 2nd submittal using confirmed references so that the process is shortened (substantially).
The reason for my suggestion is that on the new application, there are several ways to make points (it's a points system) other than just with documenting projects. Keep in mind that if you use your pw0-205 (CWAP) exam rather than passing the pw0-300, your certification will still expire on Dec 31, 2008. Regarding companies that are hiring WLAN engineers. Sign up for LinkedIn.com and then do a job search on CWNA, CWSP, CWNE, etc. Also, go to Indeed.com and do a search on the same. I've sent you an attached graphic showing where on LinkedIn.com to search. I've also attached a list of Wi-Fi companies (their employment links) to help you in your search. Regarding finding someone to intern with, hit the CWNP forum and ask that very question.
Regarding your question of using other certifications, that's one of the reasons I'm pointing you to the new application - we allow for that. If you see a type of certification that you feel should be allowed for points (but currently isn't), please suggest it at customercare@cwnp.com and we will certainly consider it. Though it currently isn't on the application, HAM certification (provided it's a proctored exam) would qualify toward CWNE.
I will "hold" your application pending submittal of your new application. That way I will have your referrals and such already confirmed.

Yes, I received your e-mail. I appreciate you getting back to me regarding my application. In response to your e-mail on that date I am unable at this time to document two additional wireless scenarios due to the fact that I have not been able to perform any additional wireless engagements. Since I am an educator and work for an IT business school we do not have any additional wireless engagements which I can perform in order to gain additional experience.
Due to this problem, please advise and recommend a course of action so that I can continue toward achieving the CWNE certification.
1.) Can I take the latest CWNE exam and qualify with no additional documentation/experience needed?
2.) Can you *Hold* my application until I can try to change jobs in order to get more working experience with wireless technologies? Hopefully I can make this happen before the end of the year. I am interviewing daily. Do you know of any wireless companies hiring in the Dallas metroplex?
3.) Can you put me in touch with anyone in the Dallas, Texas metroplex who is performing wireless engagements? I am prepared to work as an intern in order to gain the necessary experience.
4.) Can I substitute additional wireless certifications for the missing documented scenarios? I have already acheived my HAM Amateur Radio Operators license (Technician's Class). I am interested in going for the General Class certification which has a morse code requirement. Another wireless certification that I can think of is CompTIA's RFID+. I am very interested in pursuing this subject. I do not know any other wireless credentials but am open if this is a possibility.
5.) Do you have any other ideas to help me? I really want to achieve this certification and work with wireless technologies.
